To brew a good pot of Dian black tea, you need to pay attention to the tea leaves, water, temperature, time, tea utensils, etc. Only by mastering these elements can you brew a good tea.

Let’s start with the amount of water used to make tea. There is actually no unified standard for the amount of tea added each time when making Dian black tea. It is mainly determined based on the type of tea, the size of the tea set, and the drinking habits of consumers. To make tea at home, usually 3-4 grams of tea leaves can be put into an ordinary 200 ml tea cup. When brewing, first add 1/3 cup of boiling water, wait for a while, and then brew until it is 70 to 80% full. If you are making tea in a teapot, you can also follow the above method.

Next, let’s talk about water quality and water temperature. Since ancient times, tea drinking has paid attention to water quality. Good water quality can allow Dian black tea to fully display its sweet and delicious taste. Generally speaking, colorless, odorless water with high oxygen content is most suitable for making Dian black tea, and spring water, well water and stream water are the best. Commercially available mineral water can also be substituted if it is pure water or natural water.

Usually the tap water at home contains chlorine, so before making tea, let it sit in a large container overnight and boil it after the chlorine gas has dissipated. In addition, the air in the boiled water has been reduced. If it is boiled for a second time, the unique aroma and color of Dian black tea will be greatly reduced. In fact, not only Dian black tea, but also other teas are not recommended to be brewed with boiling water for a second time.

As for the brewing water temperature, it should be between 90-100°C, except of course when the boiling point is different due to the height of the sea waves. If you cannot see the temperature display, generally after the water boils, turn off the heat and wait for a while before brewing. The waiting time depends on the room temperature. If it is difficult to control the time, another convenient method is the "high flushing method", which is to hold the hot water kettle high so that the hot water injected into the kettle will have a buffer and a cooling effect.

To brew a good tea, the tea leaves need to be separated from the tea soup after brewing. At this time, mastering the brewing time becomes the key. According to the "Yuncha Dacan", if the brewing time is too long, all the tannins and catechins in the tea will be released, making the tea soup bitter. On the contrary, if the brewing time is too short and the amino acids in the tea are not released enough, the sweetness of Dian black tea will not be brewed, and the tea soup will have an obvious watery taste.

If you cannot control by time, you can judge based on the color of the tea soup. As long as the color of the tea soup is correct, you will be able to brew a cup of good tea. Since the color of the tea soup of different tea leaves is different, it must be judged based on experience, but generally speaking, the tea soup should be bright and clear, with a brilliant color, and should not be turbid.

The brewing time and frequency are related to the type of tea, the temperature of tea brewing water, the amount of tea used and tea drinking habits. At the same time, the brewing time is also related to the tenderness of the tea and the processing method.

Generally speaking, delicate tea leaves are easier to extract than thicker tea leaves, and the brewing time should be shorter, and vice versa; loose tea leaves are easier to extract than compact tea leaves, and the brewing time should be shorter, and vice versa; broken tea leaves and intact tea leaves, broken tea leaves are easier to brew, and the brewing time should be shorter, and vice versa.

Finally, there is the tea set. The attractive aroma of Dian black tea is mainly emitted by the heat. If boiling water is poured directly into an ice-cold tea set, and then poured into an ice-cold tea cup after brewing, the heat will be greatly reduced and the aroma will not be brought out.
